Chicken Katsu

This delicious katsu dish has the flavor and aroma of happiness. Bring a smile to the family and make this scrumptious dish for dinner!


2 chicken breasts
1 egg
1 shallot
8g soy sauce
20g mango chutney
1 carrot
30g panko breadcrumbs
130g brown rice
15g fresh ginger
59g baby leaf
1 tbspn curry powder
10g rice vinegar


1. Boil rice with plenty of cold water and salt over a high heat for 15-20 minutes

2. Boil the kettle

3. While rice is cooking shave half the carrot and grate the other half

4. Finely chop shallot and ginger

5. Now cook carrot, ginger and shallot with a tspn of oil for 3-4 minutes on a medium heat

6. Add curry powder and cook for further 2 minutes

7. Add 1 tspn of plain flour cook for 1 minute

8. Add 300ml hot water, soy sauce, mango chutney and cook for a further 5-7 minutes

9. Check seasoning

#10. Crack the egg in a shallow bowl, add 2 tspn flour to a separate bowl and season, add panko to another bowl

11. Mix baby leaf and carrot with salt and rice vinegar

12. Coat the chicken, in flour, tap off excess, then dip in beaten egg and finally in panko

13. Shallow fry on medium 5 minutes on each side or until cooked or bake for 15-18 minutes
